- 3 – 8 oz Block Cracker Barrel Extra sharp cheddar cheese (2 yellow and 1 white Vermont Cheddar)
- 2 whole jalepeno w/ seeds
- 1 whole jalapeño w/o seeds
- 1 medium onion
- 3/4 – 1 whole head of garlic
- 1/2 cup sugar free mayo (recommend Duke’s)
You can use a grinder or food processor.
Place Jalapeños, onion, cloves of garlic into food processor or grinder, pulse until diced. Transfer this mixture to a large bowl.
Add chunks of cheese to food processor with shredder disk. Shred all three blocks of cheese, transfer to bowl with garlic and onion mixture as needed.
Empty all the yumminess into mixing bowl and add mayo. Mix until everything is well blended
This dip will get better as it sets. Leave refrigerated until ready to eat.
Serve with your favorite crackers, crusty bread, red pepper strips and other veggie sticks. Also fantastic on strips of Big Mike’s Original, Peppered or Spicy jerky.
