2 tbsp oil divided
1 tbsp onion, chopped
1 cup shredded potatoes
1/4 cup Big Mike’s mushroom jerky, chopped
2 eggs
Heat 1 tbsp oil in a skillet or griddle then add the onions. Sauté the onions until translucent. Add the potatoes and chopped mushroom jerky. Cook until potatoes are starting to brown, add rest of the oil then turn over once to heat both sides. Divide mixture into two “nests”. Crack each egg into a nest. Lower heat. Add a lid to steam the eggs and soften the potatoes or leave uncovered for crispier potatoes.
